Friday's Cuma Sebze Pazarı in Şekerhane is by far the largest. It's right in the city centre, next to the main dolmuş stop, and sells everything from fresh produce to clothing, footwear, kitchenware and souvenirs. I always send first-time visitors there.
Yes two, in fact. Tuesday and Saturday both have a Mahmutlar Pazarı, both in the open area in front of Akdeniz Park AVM. The Tuesday one is the bigger of the two.
Most are a healthy mix. The Friday market and the Okurcalar Turizm Pazarı are particularly tourist-friendly. The Hacet Sunday market is very local mostly fruit and vegetables at honest prices, not much for souvenir hunters. All of them are worth experiencing for the atmosphere alone.
For produce, the price is typically fixed and already fair these are local sellers, not tourist traps. For clothing, textiles, and souvenirs, a polite negotiation is entirely normal. My rule: if you're buying more than one item, always ask for a bundle price.
Most markets open around 08:00 and close by 18:00–20:00 depending on the season. Go in the morning by noon the freshest produce is taken and some stalls begin packing up.
