Having spent years inside this industry, I can tell you plainly: with the right vehicles, the right route, and the right people behind the wheel, jeep safari is an extremely safe way to spend a day. It's designed to be exciting, not risky.
The problem is that Turkey has a fair number of unlicensed operators running around, and safety simply isn't their focus the way it should be. That's usually exactly why their prices look so tempting a lower price often means fewer checks, older vehicles, and less trained staff behind them.
